Tomato Sauce


  • 2 cans tomatoes, chopped
  • 4 tablespoons tomato paste
  • 6 cloves garlic, minced
  • 4 teaspoons fresh oregano, chopped (optional substitute: 1 teaspoon dried)
  • 3 teaspoons extra-virgin olive oil
  • 2 teaspoons fresh thyme (optional substitute: 1/2 teaspoon dried)
  • You will also need salt and freshly ground pepper to taste


  1. Heat oil in saucepan over medium heat. Sauté garlic for about 2 minutes. Then add tomatoes, tomato paste, oregano and thyme.
  2. Reduce heat and let simmer, uncovered. Stir occasionally. Let simmer for about 30 minutes, until mixture is thick.
  3. Remove from heat, season with salt and pepper.
  4. Enjoy on pizza dough or in your favorite pasta dish!
