Split Pea Spread


  • 1 cup yellow split peas
  • 3 cups water
  • 1/3 cup red onion, diced
  • 3 tablespoons fresh dill or parsley, chopped
  • 5 cloves garlic, crushed
  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon salt
  • You will also need freshly ground pepper to taste


  1. Combine split peas, garlic and water in a saucepan; bring to a boil. Then reduce heat to low and cover for about 30 minutes.
  2. Uncover and simmer, stirring often. Mixture should become thick after about 10 to 20 minutes.
  3. Remove pan from heat and then stir in salt. Cover with plastic wrap and let cool.
  4. Pour mixture into a food processor. Add lemon juice and a tablespoon of olive oil, process until the mixture appears smooth.
  5. Pour mixture into a bowl; drizzle olive oil, season with pepper and add red onion and dill/parsley to garnish.
  6. Enjoy!
