Split Pea Spread
Ingredients:
- 1 cup yellow split peas
- 3 cups water
- 1/3 cup red onion, diced
- 3 tablespoons fresh dill or parsley, chopped
- 5 cloves garlic, crushed
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons lemon juice
- 1 teaspoon salt
- You will also need freshly ground pepper to taste
Directions:
- Combine split peas, garlic and water in a saucepan; bring to a boil. Then reduce heat to low and cover for about 30 minutes.
- Uncover and simmer, stirring often. Mixture should become thick after about 10 to 20 minutes.
- Remove pan from heat and then stir in salt. Cover with plastic wrap and let cool.
- Pour mixture into a food processor. Add lemon juice and a tablespoon of olive oil, process until the mixture appears smooth.
- Pour mixture into a bowl; drizzle olive oil, season with pepper and add red onion and dill/parsley to garnish.
