Red Lentil Soup
Ingredients:
- 1-1/2 cups Golden packaged red lentils
- 5 cups reduced-sodium broth (Chicken or Vegetable)
- 1 can diced tomatoes, canned
- 1 cup onion, finely chopped
- 1 tablespoon garlic, crushed
- 1/3 teaspoon cayenne pepper
- 1 teaspoon ground cumin
- You will also need: cooked rice, baby spinach, sliced almonds (Toasted), and low-fat plain yogurt.
Directions:
- In a large 4-quart saucepan, combine lentils, tomatoes, broth, onion, garlic, cumin, and cayenne pepper. Bring to a boil and then reduce heat to low. Cover and let simmer for about 20 minutes, or until lentils are fully cooked.
- Once lentils are fully cooked, serve soup into bowls and garnish with cooked rice, baby spinach, sliced almonds and yogurt.
