Red Lentil Soup


  • 1-1/2 cups Golden packaged red lentils
  • 5 cups reduced-sodium broth (Chicken or Vegetable)
  • 1 can diced tomatoes, canned
  • 1 cup onion, finely chopped
  • 1 tablespoon garlic, crushed
  • 1/3 teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • You will also need: cooked rice, baby spinach, sliced almonds (Toasted), and low-fat plain yogurt.


  1. In a large 4-quart saucepan, combine lentils, tomatoes, broth, onion, garlic, cumin, and cayenne pepper. Bring to a boil and then reduce heat to low. Cover and let simmer for about 20 minutes, or until lentils are fully cooked.
  2. Once lentils are fully cooked, serve soup into bowls and garnish with cooked rice, baby spinach, sliced almonds and yogurt.
  3. Enjoy!
