Fava Bean Puree
Ingredients:
- 2 cups dried Fava beans
- 3 tablespoons capers, salted
- 10 arugula leaves
- 2 cloves garlic
- 1 cup extra-virgin olive oil
- You will also need salt and freshly ground pepper
Directions:
- Soak fava beans in about 3 inches of water, cover and store overnight. If you prefer you may do a fast soak: put beans in a saucepan and cover with 3 inches of water, bring to a boil, remove from heat after about 1 minute and let soak for an hour.
- Drain the fava beans and peel off shells. Add beans to a saucepan and add water to completely cover and bring to a boil over medium-high heat. Cook until tender, which should be about 20 minutes.
- Drain and let cool for about 30 minutes.
- Add beans, garlic, and olive oil to food processor; process until smooth, about 1 minute. Pour bean puree into a bowl and season with salt and pepper.
- Serve at room temperature; store in refrigerator.
- You may garnish with olive oil, capers and arugula
- Enjoy with pita chips.
