Fava Bean Puree


  • 2 cups dried Fava beans
  • 3 tablespoons capers, salted
  • 10 arugula leaves
  • 2 cloves garlic
  • 1 cup extra-virgin olive oil
  • You will also need salt and freshly ground pepper


  1. Soak fava beans in about 3 inches of water, cover and store overnight. If you prefer you may do a fast soak: put beans in a saucepan and cover with 3 inches of water, bring to a boil, remove from heat after about 1 minute and let soak for an hour.
  2. Drain the fava beans and peel off shells. Add beans to a saucepan and add water to completely cover and bring to a boil over medium-high heat. Cook until tender, which should be about 20 minutes.
  3. Drain and let cool for about 30 minutes.
  4. Add beans, garlic, and olive oil to food processor; process until smooth, about 1 minute. Pour bean puree into a bowl and season with salt and pepper.
  5. Serve at room temperature; store in refrigerator.
  6. You may garnish with olive oil, capers and arugula
  7. Enjoy with pita chips.
