Chickpea Tuna Salad
Ingredients:
- 3 cups (2 cans) chickpeas
- 1 pound Tuna Steak
- 1 cup yellow onion, chopped
- 1 cup red bell pepper, chopped
- 3 tablespoons fresh cilantro, chopped
- 1/3 cup extra-virgin olive oil
- 1/4 cup white wine vinegar You will also need salt and pepper for taste
Directions:
- Combine chickpeas, onion, red pepper and cilantro in a bowl. Add 4 tablespoons olive oil, vinegar, salt and pepper to bowl.
- Toss chickpeas mix and cover with plastic wrap. Place in refrigerator for about 1 hour.
- While chickpeas mix is in refrigerator, season tuna steak with salt and pepper. Add oil to skillet and place tuna steak over heat. Sear for about 2 minutes on each side.
- Remove tuna from heat and let cool. Serve tuna steak over chickpeas.
