Basmati Rice Salad
Ingredients:
- 1 cup Royal Basmati Rice
- 2 cups water
- 1/3 cup low-fat plain yogurt
- 1 clove garlic (crushed)
- 3 cups baby spinach
- 1 teaspoon salt
- 1/3 teaspoon ground cumin
- 1/3 teaspoon ground coriander
- 1 medium sized mango, peeled and chopped
- 1 cup green peas (frozen)
- 2 tablespoons sliced almonds, toasted
- 1/3 cup Lime flavored dressing
Directions:
- In large saucepan, combine rice, water and salt. Bring rice to a boil uncovered.
- Once the water comes to a boil, remove from high heat to medium-low and cover. Let simmer for 10 minutes, until water is absorbed.
- Remove from heat and let stand for about 5 minutes, covered. Then transfer rice from saucepan to large plate; cool completely.
- Then combine garlic, dressing, yogurt, coriander, cumin, and salt in a large bowl.
- Then add rice, spinach, peas, mango, and almonds to bowl and mix well.
