Basmati Rice Salad


  • 1 cup Royal Basmati Rice
  • 2 cups water
  • 1/3 cup low-fat plain yogurt
  • 1 clove garlic (crushed)
  • 3 cups baby spinach
  • 1 teaspoon salt
  • 1/3 teaspoon ground cumin
  • 1/3 teaspoon ground coriander
  • 1 medium sized mango, peeled and chopped
  • 1 cup green peas (frozen)
  • 2 tablespoons sliced almonds, toasted
  • 1/3 cup Lime flavored dressing


  1. In large saucepan, combine rice, water and salt. Bring rice to a boil uncovered.
  2. Once the water comes to a boil, remove from high heat to medium-low and cover. Let simmer for 10 minutes, until water is absorbed.
  3. Remove from heat and let stand for about 5 minutes, covered. Then transfer rice from saucepan to large plate; cool completely.
  4. Then combine garlic, dressing, yogurt, coriander, cumin, and salt in a large bowl.
  5. Then add rice, spinach, peas, mango, and almonds to bowl and mix well.
  6. Enjoy!
